Honey runs in the family for Melissonas Fergadi or Fergadi Apiary in the island of Skyros, as the family business has been passed from father to child for four generations now. Honey is produced completely naturally in Melissonas Fergadi. After the extraction of the honey through centrifugation, it is filtered through a thin cloth and then put into barrels for it to mature. Then, once it is ready it’s bottled. Apart from the extraction there are no other machines involved and of course no preservatives are used– simple and pure just like honey should be.
Thyme honey from Melissonas Fergadi has percentages up to 65-80% of thyme, according to official chemical analyses. This is extraordinary if one is to think that by law a honey needs to have only 18% of thyme presence to be categorized as thyme honey. The apiary also produces pine honey and pine heather honey which is quite unique. Apart from honey, you can find all other honey by-products in Melissonas Fergadi.
