Erga Gis Aigaiou came to be after its five initiators, all born and raised in Lesbos, decided they wanted to share with the world the uniqueness of their island’s products.
The products offered under the name “Olisticon” include local extra virgin olive oil, olives, herbs, aromatics and seasalt, which comes in many Mediterranean-inspired flavours.
Lesbos is famous for its olive oil, and this company offers extra virgin and virgin olive oil from the Adramitiani and Kolovi varieties, which are indigenous to the island.
As for the herbs and aromatics, they are collected by hand from the fields where they are grown or from the local olive groves where the olives are harvested. Then they are dried traditionally, as they are hanged and dry-aired with no use of ovens or other artificial procedures whatsoever. The herb and aromatic products include dry basil, oregano, lavender, sage and spearmint.
The climate conditions of the islands really favour the third product of Erga Gis Aigaiou, the sea salt. Since the sun hits the salt marshes directly for more than half the days of the year, Lesbo’s sea salt is quite particular as it needs no further processing apart from its cleaning. Cleaning is also done traditionally by hand; again, no machinery is used. The company has been experimenting lately with sea salt flavours through their collaboration with Chefs. Some of these include traditional ones like salt and oregano or salt and lemon and others more particular like salt and black garlic.
The people behind Erga Gis Aigaiou want consumers to know that all their products are exclusively from Lesbos and that their processing methods are as pure as possible. Their love for their island and its products is the driving force of what they do, which is transferable to their products’ quality!
