“I Limnia” or “the one from Lemnos” is a traditional pasta artisanship in the village of Livadohori in Lemnos.
The pasta of this small company is based completely on the local traditional pasta-making recipes that derive from the times of the Ottoman Empire.
The flour used for the pasta is the famous local indigenous hard flour of Lemnos, which is ideal for pasta making. The rest of the ingredients like the eggs or the milk used are all produced a few meters away from where the pasta products are being made by the Kellaris family, which is behind “I Limnia”. As they say, these raw materials could not be purer and they truly are not even comparable to conventional raw materials.
“I Limnia” produces a variety of traditional pasta products like “flomari” which is a traditional local pasta similar to pappardelle in its shape, a local version of couscous and trahanas, a beloved Greek comfort food.
The people behind “I Limnia” want consumers to try their products in their simplest form, so they can appreciate the richness and deep flavours of the pasta products themselves and let the pure raw ingredients shine.
