Tou Tsopani or The Sheperd’s Cheese, by Georgoulis Farm, could not be a better name for this company, as it describes exactly what it is all about. When the Georgoulis family had trouble finding someone to buy their milk in Chios, they decided to start their own dairy. Thus, they are truly shepherds that decided to make cheese and gain the added value of their high-quality milk.
The recipes are traditional, coming from way back in time and have been passed from generation to generation as the Georgoulis family has a long history of shepherds who made their own cheese. Today these recipes are modernized through new methods, while some new ones are also created by the youngest members of the family who are now slowly taking the ropes as well.
“Our products are not industrialized, and you can really taste it. It is not our aim anyway to produce tons of products, but simply to consume our own milk and produce high quality cheese” says Despoina one of the youngest members of Georgoulis family. The animals are truly free range and as Despoina says, “you can really taste what the goat is eating, first in the milk and then in the cheese.”
The Georgoulis family want consumers to know that they produce their cheese as they would produce it for their family. “We like to offer to the consumers, what we would offer to our children, nothing less”.
